  • 1 1/2 lbs. boneless, skinless chicken thighs
  • 2 tsp fresh ginger (finely grated)
  • 2 tsp minced garlic
  • 3 tbsp low sodium soy sauce
  • 3 tbsp brown sugar
  • 1 tsp sesame oil
  • 1 tbsp rice vinegar
  • 2 tbsp gochujang
  • Chopped green onions (for garnish)

Instructions

  1. Cut chicken thighs into 1 1/2" cubes and place them in a bowl.
  2. In another bowl, whisk together ginger, garlic, soy sauce, brown sugar, sesame oil, rice vinegar, and gochujang to create the marinade.
  3. Pour half the marinade over the chicken and mix well. Cover and refrigerate for at least 4 hours or overnight.
  4. Thread marinated chicken onto skewers. Preheat grill to medium heat.
  5. Grill skewers for about 20-30 minutes, turning every few minutes and basting with remaining marinade until cooked through (165°F internal temperature).
  6. Serve hot with chopped green onions on top.
