  1. Wash cucumbers under cold water and slice them into quarters or rounds.
  2. Sprinkle salt over the cucumbers and let them sit for 10–15 minutes to draw out moisture.
  3. In a separate bowl, whisk together rice vinegar, soy sauce, chili flakes, sugar, and sesame oil until well combined.
  4. Drain excess liquid from the cucumbers and transfer them back to the bowl.
