  • 3/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup unsalted butter (room temperature)
  • 1/4 cup vegetable oil
  • 3/4 cup sugar
  • 2 large eggs
  • 6 tbsp milk
  • 1/4 cup fresh lemon juice
  • 1 tbsp lemon zest
  • For frosting: 1 cup unsalted butter (room temperature), 4 cups powdered sugar, lemon juice, and zest.

Instructions

  1. Preheat oven to 350°F (176°C) and line a cupcake pan with liners.
  2. In one bowl, mix flour, baking powder, baking soda, and salt.
  3. In another bowl, cream together butter, oil, sugar, and vanilla until fluffy. Add eggs one at a time.
  4. Gradually incorporate dry ingredients into the mixture while alternating with milk mixed with lemon juice.
  5. Fill cupcake liners three-fourths full and bake for 15-18 minutes until done.
  6. Cool completely before frosting with lemon buttercream.
