  • 2 cups water
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: 1/4 cup feta cheese, crumbled

Instructions

  1. Rinse the quinoa under cold water to remove bitterness.
  2. In a saucepan, combine rinsed quinoa with water; bring to a boil. Reduce heat, cover, and simmer for about 15 minutes until water is absorbed.
  3. Fluff the cooked quinoa with a fork and let it cool.
  4. In a large mixing bowl, combine cooled quinoa, chickpeas, cucumber, red onion, and parsley.
  5. In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic powder, salt, and pepper.
  6. Pour the dressing over the salad mixture and toss gently to coat.
  7. Serve chilled or at room temperature; top with feta if desired.
