1 pound ground chicken
1 cup ricotta cheese
1 cup breadcrumbs
2 tablespoons lemon juice
1 teaspoon dried oregano
1 cup orzo pasta
2 cups fresh spinach
4 cloves garlic, minced
½ cup grated Parmesan cheese
Instructions
In a mixing bowl, combine ground chicken, ricotta cheese, breadcrumbs, lemon juice, and oregano. Mix gently until just combined.
Chill the mixture in the refrigerator for 30 minutes.
Preheat oven to 400°F (200°C). Shape the mixture into meatballs (about two inches wide) and place on a parchment-lined baking sheet.
Bake for 20 minutes until golden brown and cooked through (165°F internal temperature).
