  • 6 large russet potatoes
  • 1/4 cup unsalted butter
  • 4 oz cream cheese
  • 2/3 cup sour cream
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • Salt and pepper (to taste)
  • 2 cups shredded cheddar cheese
  • 1 1/2 cups cooked and crumbled bacon
  • 1/4 cup diced green onions

Instructions

  1. Preheat your oven to 375°F and spray a 9×13 casserole dish with nonstick cooking spray.
  2. Wash, peel, and dice the russet potatoes. Boil them in a large pot of water for about 15–20 minutes until tender. Drain using a colander.
  3. In the empty pot, combine the drained potatoes with butter, cream cheese, sour cream, and milk. Mix until smooth.
  4. Stir in garlic powder, salt, pepper, cheddar cheese (reserve some), and crumbled bacon.
  5. Pour the mixture into the prepared casserole dish, top with remaining cheese and bacon.
  6. Bake for 25–30 minutes until golden brown and bubbly. Let it rest before serving.
