  • 4 large russet potatoes
  • 4 tablespoons olive oil
  • 2 lbs steak (NY strip, ribeye, sirloin, or tenderloin)
  • 2 teaspoons kosher salt
  • 2 tablespoons garlic (minced)
  • 6 tablespoons butter (softened)
  • 1.5 cups heavy cream
  • 2/3 cup grated parmesan cheese
  • Fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C). Scrub and dry the potatoes, then rub them with olive oil and sprinkle with sea salt.
  2. Place the potatoes on a baking sheet lined with parchment paper and bake for 50–60 minutes until tender.
  3. While potatoes bake, cut your steak into bite-sized cubes and season with kosher salt and Cajun seasoning.
  4. Heat avocado oil in a cast iron skillet over medium-high heat, then sear the steak until browned on all sides.
  5. In the same skillet, melt butter and sauté garlic until fragrant, then return steak to the pan to coat in the garlic butter.
  6. In a saucepan, simmer heavy cream and whisk in parmesan cheese until smooth; add lemon juice and pepper.
  7. Slice baked potatoes open, fluff the insides, fill with steak bites, drizzle with creamy sauce, and garnish with parsley.
