  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ¼ red onion, thinly sliced
  • ¼ cup kalamata olives (pitted)
  • 2 cups romaine or mixed greens (washed)
  • ⅓ cup crumbled feta cheese (optional)

Instructions

  1. Marinate chicken breasts in olive oil, lemon juice, garlic, oregano, salt, and pepper for at least 15 minutes.
  2. Preheat grill or grill pan over medium-high heat. Grill chicken for about 6-7 minutes on each side until cooked through (internal temperature should reach 165°F). Let rest for 5 minutes before slicing.
