  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can (15 ounces) black beans (rinsed and drained)
  • 1 can (15 ounces) diced tomatoes with green chilies
  • 1 cup corn kernels (frozen or canned)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup diced green onions
  • 1/2 cup sour cream
  • 1 cup salsa (mild or spicy)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil salted water in a large pot and cook the penne pasta until al dente according to package instructions. Drain and set aside.
  3. In a large skillet, heat olive oil over medium-high heat and brown the ground beef until fully cooked. Drain excess fat if necessary.
  4. Stir in the taco seasoning, black beans, diced tomatoes, and corn into the skillet; simmer for about five minutes.
  5. In a mixing bowl, combine the cooked penne, beef mixture, salsa, and sour cream until evenly blended.
  6. Transfer the mixture to a greased 9×13 inch baking dish; top with cheddar and mozzarella cheese.
