  • 2 lbs Russet potatoes (or sweet potatoes), diced
  • 2 tbsp Olive oil
  • 1 tsp Red paprika seasoning
  • 1 tsp Salt
  • 1 lb Lean ground beef (85/15 ratio)
  • 2 tbsp Taco seasoning
  • 1/4 cup Water
  • 1 cup Shredded yellow cheddar cheese
  • 1 cup Diced tomatoes (Roma)
  • 1 cup Shredded romaine lettuce
  • 1/2 cup Sour cream
  • 1/4 cup Fresh cilantro leaves, chopped

Instructions

  1. Preheat the oven to 425°F (220°C). In a mixing bowl, toss diced potatoes with olive oil, red paprika seasoning, and salt until well coated.
  2. Spread the potatoes in an even layer on a large baking sheet. Roast for 25–30 minutes, flipping halfway through until golden and crispy.
  3. In a skillet over medium-high heat, brown the ground beef for about 5–7 minutes. Drain excess fat and add taco seasoning and water; simmer until thickened.
  4. Assemble the bowls by layering roasted potatoes, seasoned beef, cheddar cheese, diced tomatoes, and shredded lettuce.
