  • 1 pound large shrimp (peeled and deveined)
  • 2 tablespoons high-smoke-point oil (like avocado or canola)
  • 2 tablespoons butter
  • 1/4 medium onion (minced)
  • 2 teaspoons garlic (minced)
  • 1/3 cup sun-dried tomatoes (chopped)
  • 1 cup chicken stock
  • 1 1/2 cups heavy cream
  • 1/4 cup cream cheese
  • 2 cups baby spinach
  • Salt and pepper (to taste)

Instructions

  1. Pat the shrimp dry and season with salt and pepper.
  2. Heat oil in a skillet over medium-high heat, then add shrimp and cook until pink, about 2 minutes per side. Remove and set aside.
  3. In the same skillet, melt butter, then add minced onion, cooking until translucent.
  4. Stir in garlic, sun-dried tomatoes, and dried herbs; cook for one minute until fragrant.
  5. Whisk in chicken stock and bring to a simmer for about 2-3 minutes.
  6. Reduce heat and add heavy cream and cream cheese; stir until smooth.
  7. Add spinach and cooked shrimp back into the skillet; cook until heated through.
