  • 3 lbs Yukon Gold potatoes
  • 1 pint cherry tomatoes
  • 1/2 large cucumber
  • 1/4 medium red onion
  • 1/3 cup Kalamata olives
  • 1 tablespoon capers
  • 1/4 cup fresh dill
  • 1/3 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt

Instructions

  1. In a large pot of salted boiling water, cook the Yukon Gold potatoes for about 12 minutes until fork-tender. Drain and let cool.
  2. While the potatoes cool, slice the cherry tomatoes in half, slice the cucumber into rounds, and thinly slice the red onion.
  3. In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, honey, oregano, and salt until well combined.
  4. In a large mixing bowl, gently combine the cooled potatoes with cherry tomatoes, cucumber, red onion, Kalamata olives, capers, and dill.
