  • 2 tbsp mayonnaise
  • 2 tbsp sour cream
  • 1/4 cup Cotija cheese (crumbled)

  • Salt and pepper to taste
  • Optional: sliced avocado, black beans, fresh cilantro

  2. Season shrimp with salt, pepper, lime juice, and chili powder. Sauté until pink and cooked through (about 3 minutes per side), then set aside.
  3. In the same skillet, add corn kernels and sauté for about 7–8 minutes until charred.
  4. In a mixing bowl, combine charred corn with mayonnaise, sour cream, Cotija cheese, lime juice, red onion, cilantro (if using), chili powder, and salt. Mix gently.
