  • 1 tbsp ghee or butter
  • 3 cups corn kernels
  • ¼ tsp fine sea salt
  • ¼ cup crumbled cotija cheese
  • ½ cup thinly sliced green onions
  • ½ cup cilantro
  • 1 clove garlic, finely minced
  • 1 tbsp fresh lime juice
  • 2 tbsp mayonnaise
  • 1 tbsp sour cream
  • 1 tsp tajin

Instructions

  1. Soak minced garlic in lime juice for flavor enhancement.
  2. Heat olive oil and ghee in a large skillet over medium heat.
  3. Add corn and salt, stirring to coat evenly.
  4. Spread corn in an even layer and let it char for about 2 minutes without stirring.
  5. Toss and repeat the charring process two more times for even color.
  6. Transfer charred corn to a mixing bowl.
  7. In a small bowl, mix mayonnaise, sour cream, tajin, and soaked garlic; pour over corn and stir well.
