  • 24 jumbo pasta shells
  • 2 pounds lean ground beef
  • 1 cup sweet yellow onion, diced
  • 1 tablespoon fresh garlic, minced
  • 2 ounces mild taco seasoning
  • ¾ cup water
  • 16 ounces mild salsa
  • 2½ cups shredded Colby jack cheese

Instructions

  1. Cook the jumbo shells according to package instructions until al dente. Drain and set aside.
  2. Preheat your oven to 375°F (190°C).
  3. In a saucepan, brown the ground beef over medium-high heat with diced onions and minced garlic until fully cooked. Drain excess fat if necessary.
  4. Stir in taco seasoning, water, and salsa; simmer for about five minutes.
  5. Fill each shell with three tablespoons of the beef mixture and place them in a lightly greased baking dish.
  6. Cover the dish with foil and bake for 20 minutes.
  7. Remove foil and sprinkle cheese on top; bake uncovered for an additional 10 minutes until cheese is melted and bubbly.
