  • 1 cup boiling water
  • 1¾ cups all-purpose flour
  • 1½ cups granulated sugar
  • 2 large eggs
  • ¾ cup whole milk
  • ½ cup vegetable oil
  • 1¾ teaspoons vanilla extract
  • 2 large egg whites (for marshmallow filling)
  • â…” cup granulated sugar (for marshmallow filling)
  • 8 teaspoons water (for marshmallow filling)
  • 4 cups melted chocolate (for coating)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Combine sifted cocoa powder with boiling water until smooth.
  3. In another bowl, whisk together flour, sugar, baking powder, and salt. Add eggs, milk, oil, vanilla extract, and cocoa mixture; mix until combined.
  4. Pour batter into prepared sheets and bake for about 20 minutes. Cool on a rack.
  5. For the marshmallow filling: Heat egg whites, sugar, and water in a saucepan until dissolved; whip until stiff peaks form.
  6. Cut cooled cakes into rounds, fill half with marshmallow filling, top with another round.
  7. Dip each sandwich in melted chocolate and let set on parchment paper.
