  • 1 ¾ cups whole wheat flour
  • ¼ cup wheat germ
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 1 ½ cups buttermilk
  • 3 tbsp molasses
  • 2 tbsp melted butter

Instructions

  1. Preheat oven to 425°F (220°C). In a bowl, mix all-purpose flour, whole wheat flour, wheat germ, baking soda, and salt.
  2. In another bowl, whisk buttermilk, molasses, and melted butter. Combine with dry ingredients until just mixed.
  3. Turn dough onto a floured surface; knead gently to form a ball. Flatten into a circle about 7 inches wide.
  4. Place on a floured baking sheet; score the top with a knife.
  5. Bake for 15 minutes at 425°F, then reduce heat to 375°F (190°C) and bake for an additional 30-35 minutes until golden brown and hollow-sounding when tapped.
  6. Cool wrapped in a tea towel.
