  • 1 packet instant yeast (2 1/4 teaspoons)
  • 1 1/2 teaspoons salt
  • 1 tablespoon sugar
  • 1 1/2 cups warm water (110°F)
  • 1 tablespoon fresh rosemary, chopped
  • 1/2 cup grated Parmesan cheese
  • 8 ounces mozzarella cheese, cut into cubes
  • 1/4 cup baking soda
  • 1/4 cup unsalted butter, melted
  • Coarse sea salt for topping

Instructions

  1. In a mixing bowl, combine warm water, yeast, and sugar. Let it sit until foamy (about 5 minutes).
  2. Mix flour and salt in another bowl. Gradually add to the yeast mixture; stir until combined.
  3. Knead the dough until smooth (5 minutes with a stand mixer or 8 minutes by hand). Incorporate rosemary and Parmesan.
  4. Place dough in a greased bowl; cover and let rise for about an hour until doubled.
  5. Preheat your oven to 425°F and line a baking sheet with parchment paper.
  6. Punch down the dough; divide into eight pieces. Flatten each piece, place a mozzarella cube inside, seal, and shape into pretzels.
  7. Boil water with baking soda; boil each pretzel for about 30 seconds using a slotted spoon.
  8. Brush with melted butter and sprinkle with coarse salt before baking for 12-15 minutes until golden.
