  • 2 carrots
  • 2 celery stalks
  • 4 garlic cloves
  • 2 cups mixed nuts (e.g., walnuts, almonds, pecans)
  • 1 cup breadcrumbs
  • 1 cup vegetable broth
  • 8 oz mushrooms
  • 2 lb potatoes
  • 1 lb green beans

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Sauté chopped onion in olive oil until translucent. Add grated carrots, diced celery, and minced garlic; cook until tender.
  3. Toast mixed nuts on a baking sheet for about 8 minutes until golden brown.
  4. In a large bowl, combine sautéed veggies, toasted nuts, breadcrumbs, vegetable broth, thyme, rosemary, salt, and pepper; mix well.
