  • 1/2 cup butter (melted, slightly cooled)
  • 1 large egg
  • 2 tsp. vanilla
  • 1 1/2 cups grated zucchini
  • 1 1/2 cups semi-sweet chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, combine quick oats, flour, cocoa powder, baking soda, salt, cinnamon, and brown sugar.
  3. In another bowl, whisk together melted butter, egg, and vanilla until smooth.
  4. Mix the wet ingredients into the dry mixture along with grated zucchini and 1 cup of chocolate chips until just combined.
  5. Drop tablespoon-sized portions onto prepared baking sheets and flatten each slightly.
  6. Top each cookie with additional chocolate chips for extra indulgence.
  7. Bake for about 12-15 minutes until edges are lightly browned and centers appear set.
