  • 1 medium zucchini, grated
  • 1 medium carrot, grated
  • 1/4 cup frozen peas (optional)
  • 1 egg (or flaxseed egg for vegan option)
  • 1/4 cup unsweetened applesauce
  • 1 tablespoon coconut oil

Instructions

  1. Grate the zucchini and carrot, squeezing out excess moisture with a clean kitchen towel.
  2. In a mixing bowl, combine rolled oats, grated vegetables, optional peas, egg (or flaxseed egg), and applesauce. Mix well.
  3. Scoop about 1 tablespoon of the mixture, roll it into a ball, then flatten into a patty.
  4. For pan-frying: Heat coconut oil in a non-stick skillet over medium heat and cook fritters for 2-3 minutes on each side until golden brown. For baking: Preheat oven to 375°F (190°C) and bake fritters on a parchment-lined sheet for 20 minutes, flipping halfway through.
  5. Allow to cool completely before serving.
