  • 8 bone-in, skin-on chicken thighs
  • 500g potatoes, chopped into cubes
  • 1 red bell pepper, diced
  • 2 cups broccoli florets
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • Salt & pepper to taste
  • 1/2 cup chicken broth
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a mixing bowl, combine olive oil, minced garlic, smoked paprika, thyme, salt, and pepper.
  3. Add chicken thighs, potatoes, bell pepper, and broccoli to the bowl; toss until everything is evenly coated.
  4. Lightly oil a large baking dish and arrange the chicken thighs skin-side up with vegetables around them.
  5. Pour chicken broth into the bottom of the dish.
  6. Bake in the preheated oven for about 45 minutes or until the chicken reaches an internal temperature of 74°C (165°F) and juices run clear.
