  • 8 chicken drumsticks (skin-on)
  • 500g (1 lb) potatoes (peeled and cut into chunks)
  • 1 red bell pepper (chopped)
  • 1 green bell pepper (chopped)
  • 1 large onion (chopped)
  • 3 garlic cloves (minced)
  • 2 tsp dried Italian herbs
  • ½ tsp chili flakes (optional)
  • 1 tsp smoked paprika
  • Juice of 1 lemon
  • 3 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 200°C (392°F).
  2. In a mixing bowl, combine olive oil, minced garlic, lemon juice, Italian herbs, smoked paprika, salt, and pepper. Toss the chicken drumsticks in this mixture until well coated.
  3. In a large baking dish, arrange the potatoes, onions, and chopped bell peppers. Drizzle with olive oil and season lightly with salt and herbs.
  4. Place the seasoned drumsticks on top of the vegetable bed.
  5. Bake uncovered for about 45-50 minutes or until the chicken is golden brown and reaches an internal temperature of 75°C (165°F). Turn the drumsticks halfway through cooking.
  6. Garnish with freshly chopped parsley before serving.
