1 lb sirloin steak, cut into 1-inch cubes
1 lb penne or rotini pasta
4 tbsp unsalted butter
4 cloves garlic, minced
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
1 tbsp olive oil
1 tsp red pepper flakes (to taste)
Salt and pepper (to taste)
Fresh parsley for garnish
Instructions
Heat a large pot over medium-high heat and add olive oil. Season steak cubes with salt and pepper, then sear for about 3-4 minutes until browned. Remove from pot and set aside.
In the same pot, melt butter over medium-low heat and sauté minced garlic and red pepper flakes until fragrant, about one minute.
Add four cups of boiling water to the pot, return to a boil, then add pasta. Cook according to package instructions until al dente.
Drain pasta, reserving one cup of starchy water. Return pasta to the pot, add heavy cream and Parmesan cheese, stirring until combined. Adjust consistency with reserved pasta water if needed.
Fold in the seared steak and cook on low for an additional 2-3 minutes until heated through.
