  • 12 ounces smoked sausage (sliced)
  • 1 medium onion (diced)
  • 1 medium green bell pepper (diced)
  • 1 medium red bell pepper (diced)
  • 2 celery stalks (diced)
  • 3 cloves garlic (minced)
  • 1 1/2 cups long-grain white rice
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper (optional)
  • 3 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes (optional)
  • 1 pound shrimp (peeled & deveined)
  • 2 green onions (chopped for garnish)
  • Fresh parsley (chopped for garnish)
  • Salt & pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sliced sausage and sauté until browned, about 5-7 minutes.
  2. Stir in diced onion, green bell pepper, red bell pepper, and celery; cook until softened, about 5-6 minutes.
  3. Add minced garlic; cook for another minute until fragrant.
  4. Mix in long-grain rice; toast for 2 minutes while stirring.
  5. Sprinkle Cajun seasoning, smoked paprika, thyme, and cayenne pepper over the mixture; stir well to combine.
  6. Pour in chicken broth and diced tomatoes (if using). Bring to a boil, then reduce heat to low and cover. Simmer for 20 minutes.
  7. Fold in peeled shrimp during the last 5 minutes of cooking until pink and cooked through.
  8. Let sit covered off heat for 5 minutes before serving. Garnish with green onions and parsley.
