One Skillet Salmon with Lemon Orzo is a delightful, hassle-free meal that brings a burst of flavor to your dinner table in just 30 minutes.

  • 4 skinless salmon fillets
  • 1 cup dry orzo pasta
  • 3 cups low sodium chicken broth
  • 5 ounces baby spinach
  • Juice from ½ lemon
  • ½ cup grated Parmesan cheese
  • 1 tbsp olive oil
  • 1 tsp unsalted butter
  • 1 yellow onion (finely chopped)
  • 3 garlic cloves (minced)
  • 1 tsp dried thyme
  • 1 tsp salt (divided)
  • 1 tsp coarsely ground black pepper (divided)
  • 1 tsp sweet paprika
  • 1 tsp garlic powder
  • freshly ground black pepper (for serving)
  • chili flakes (for serving)

Instructions

  1. Season the salmon fillets with garlic powder, paprika, salt, and pepper.
  2. In a nonstick skillet, heat olive oil and butter over medium-high heat. Sear the salmon for about 3-4 minutes on each side until golden brown. Remove and set aside.
  3. Reduce heat to medium. Add chopped onion and minced garlic; sauté until soft.
  4. Stir in thyme and toast orzo for 1 minute before adding chicken broth. Bring to a boil, then simmer uncovered for about 8 minutes until nearly al dente.
  5. Mix in baby spinach, lemon juice, and Parmesan cheese until well combined.
  6. Return salmon to the skillet; warm through for an additional 2-3 minutes.
  7. Serve topped with black pepper and chili flakes.
