  • 1 cup long-grain white rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14 oz) diced tomatoes with green chilies
  • ¼ cup honey
  • 2 tbsp chili powder
  • 1 tsp smoked paprika
  • 1 cup beef broth
  • 1 tbsp olive oil

Instructions

  1. Heat a large skillet over medium heat and add olive oil.
  2. Add ground beef; cook until browned (5–7 minutes). Drain excess fat if needed.
  3. Stir in chili powder and smoked paprika; cook for another 1–2 minutes until fragrant.
  4. Add rice, black beans, diced tomatoes (with juices), honey, and beef broth. Stir well to combine.
  5. Bring to a boil, then reduce heat to low and cover. Simmer for about 20 minutes.
  6. After simmering, let it sit covered for an additional 5 minutes before fluffing with a fork.
