Ingredients

Scale
  • 8 oz penne pasta
  • 1 lb flank steak
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 small onion
  • 3 cloves garlic
  • 1 bell pepper
  • 1 cup cherry tomatoes
  • 2 cups beef broth
  • 1 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season flank steak with Cajun seasoning, salt, and pepper; sear for 3–4 minutes on each side until browned. Remove from skillet and keep warm.
  2. In the same skillet, sauté diced onion and bell pepper for 3–4 minutes until softened. Add minced garlic and cook for an additional minute.
  3. Stir in cherry tomatoes and cook for another 2 minutes until they soften.
  4. Pour in beef broth and bring to a simmer. Add penne pasta and cook according to package instructions (10–12 minutes), stirring occasionally.
  5. Once pasta is tender, lower heat and stir in heavy cream and shredded cheddar cheese until melted and smooth.
  6. Slice flank steak against the grain and fold it back into the pasta mixture. Adjust seasoning if needed before serving.
