  • 68 chicken drumsticks
  • 500g potatoes, peeled and diced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • Salt and black pepper to taste
  • 150ml chicken broth or water

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine diced potatoes, chopped bell peppers, onion chunks, and minced garlic. Drizzle with 1 tablespoon of olive oil, season with salt and black pepper, and toss until evenly coated.
  3. In another bowl, toss the chicken drumsticks with the remaining tablespoon of olive oil, smoked paprika, oregano, cumin, salt, and black pepper until well coated.
  4. Arrange the seasoned vegetables in a large baking dish and place the chicken drumsticks on top.
  5. Pour the chicken broth around the edges of the dish.
  6. Bake for 50-55 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and is golden brown.
  7. Allow to rest for five minutes before serving.
