  • 68 chicken drumsticks
  • 500g potatoes, peeled and diced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • Salt & black pepper to taste
  • 150ml chicken broth or water

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large baking dish, combine diced potatoes, chopped bell peppers, onion, and garlic. Drizzle with 1 tablespoon of olive oil and season lightly with salt and pepper.
  3. In a separate bowl, toss chicken drumsticks with the remaining olive oil, smoked paprika, dried oregano, ground cumin, salt, and black pepper until evenly coated.
  4. Arrange seasoned drumsticks on top of the vegetable mixture in the baking dish.
  5. Pour chicken broth or water around the edges of the dish without pouring directly over the chicken.
  6. Bake uncovered for about 50-55 minutes or until chicken reaches an internal temperature of 165°F (74°C), flipping halfway through for even cooking.
