  • ¼ cup fish sauce

  • 2 tablespoons soy sauce
  • Juice of 1 lime
  • ¼ teaspoon red pepper flakes
  • 10 ounces rice noodles
  • 3 tablespoons vegetable oil (divided)
  • 1 pound boneless chicken breast (sliced)
  • 1 cup bean sprouts
  • 1 medium carrot (julienned or shredded)
  • 4 cloves garlic (minced)
  • 3 large eggs (lightly beaten)
  • ½ cup roasted peanuts (chopped)
  • 3 green onions (for garnish)
  • lime wedges (for serving)

Instructions

  1. Whisk together tamarind paste, fish sauce, brown sugar, soy sauce, lime juice, and red pepper flakes in a small bowl.
  2. Cook rice noodles as per package instructions; drain and toss with oil.
  3. In a large skillet or wok, heat oil over medium-high heat. Sauté chicken until golden brown; set aside.
  4. Add bean sprouts, carrots, and garlic to the skillet; sauté for about 2 minutes. Scramble eggs on one side of the skillet until cooked.
  5. Mix in the cooked noodles, chicken, prepared sauce, and green onions until well combined.
  6. Serve hot with additional peanuts and lime wedges.
