  • 2 cups mushrooms
  • 1 large zucchini
  • 3 minced garlic cloves
  • 1 teaspoon minced ginger
  • 2 tablespoons light soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 2 tablespoons corn starch
  • 1/2 cup water
  • 1/4 cup light soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon rice vinegar
  • 2 teaspoons brown sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil

Instructions

  1. Marinate thinly sliced chicken in soy sauce, rice vinegar, sesame oil, and cornstarch for 20-30 minutes.
  2. Mix together water, soy sauce, oyster sauce, rice vinegar, brown sugar, and cornstarch in a small bowl to create the sauce.
  3. Heat vegetable oil in a large skillet over high heat and cook marinated chicken until browned. Remove from skillet.
  4. In the same skillet, sauté mushrooms and zucchini until crisp-tender.
  5. Add back cooked chicken along with minced garlic and ginger; stir-fry for about one minute.
  6. Pour the prepared sauce into the skillet; stir-fry until thickened to your liking.
  7. Serve immediately over rice or noodles.
