  • 8oz (220 grams) spaghetti or bucatini
  • 1 Tbsp olive oil
  • 1 medium-sized onion, finely chopped
  • 23 garlic cloves, minced
  • 1 can (14oz/400 grams) tomatoes (whole, diced, or cherry)
  • ½ tsp fine salt
  • â…› tsp black pepper
  • 1 handful of basil leaves, chopped or torn
  • Optional: 3 Tbsp grated parmesan (or plant-based alternative)

Instructions

  1. Boil your pasta in salted water until al dente (about 8-10 minutes). Reserve half a cup of pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent (about 5 minutes).
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the tomatoes (and their juice), salt, and pepper to the skillet. Simmer for about 10 minutes, breaking up whole tomatoes if used.
  5. Toss in cooked pasta and reserved pasta water gradually until desired sauce consistency is reached. Add torn basil leaves just before serving.
