  • 4 cups cooked rotini pasta
  • 1 cup edamame
  • 1 bunch green onion (chopped)
  • ¼ head red cabbage (shredded)
  • 1 cup carrots (grated)
  • 1 bunch cilantro (chopped)
  • ⅓ cup peanuts (crushed)
  • Juice of 1 lime
  • ⅓ cup peanut butter (melted)
  • 2 tbsp soy sauce
  • 1 tbsp sriracha
  • 23 tbsp water (to thin as needed)
  • 1 tbsp chili crunch oil
  • 1 tsp maple syrup

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. Prepare all vegetables: chop green onions, shred cabbage, and grate carrots.
  3. In a bowl, combine melted peanut butter, lime juice, soy sauce, sriracha, maple syrup, and water; mix until smooth.
  4. In a large mixing bowl, combine cooked pasta, edamame, chopped vegetables, and crushed peanuts. Pour dressing over and toss gently until evenly coated.
  5. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
