  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 can (12 oz) evaporated milk
  • 1 cup unsalted butter (softened)
  • 2 cups shredded coconut (sweetened or unsweetened)
  • 1 cup pecans (toasted and chopped)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large mixing bowl, combine crushed pineapple (with juices), eggs, vegetable oil, granulated sugar, and brown sugar until well blended.
  3. In another bowl, sift together flour, baking soda, and salt. Gradually fold the dry ingredients into the wet mixture until just combined.
  4. Pour the batter into the prepared dish and bake for 35–40 minutes or until a toothpick inserted in the center comes out clean.
  5. While the cake bakes, prepare the icing by heating evaporated milk, butter, and granulated sugar in a saucepan over medium heat until melted and smooth. Allow it to simmer for about 5–7 minutes before removing from heat and stirring in shredded coconut, toasted pecans, and vanilla extract.
  6. Once the cake is baked, let it cool for about 10–15 minutes before pouring the warm icing over it.
