  • 1/2 cup butter
  • 2 cups all-purpose flour
  • 3 tbsp cane sugar
  • 2 tbsp cinnamon
  • 1/2 cup canned pumpkin
  • 2 cups almond milk (or milk of choice)
  • 4 eggs
  • 1 tsp vanilla extract
  • 8 oz mascarpone cheese
  • 1 cup powdered sugar

Instructions

  1. Prepare the brown butter by heating it in a saucepan until golden brown; set aside.
  2. Blend flour, sugar, cinnamon, pumpkin, milk, eggs, and vanilla in a blender until smooth. Add brown butter and pulse to combine.
  3. In a nonstick skillet, pour batter to form crepes; cook until bubbles form and edges set. Flip and cook for an additional 30 seconds.
  4. Mix mascarpone with almond milk and powdered sugar until smooth.
  5. Spread mascarpone filling on each crepe and fold; serve warm.
