  • 3 cups vegetable broth
  • 1 cup coconut milk (full-fat)
  • 1 tbsp red Thai curry paste
  • 1 bag frozen vegan dumplings (12 to 15 pieces)
  • 1 tsp soy sauce
  • 1 tsp salt
  • 1 tsp sugar
  • 4 scallions
  • 1 tbsp minced garlic
  • 1/2 cup chopped cremini mushrooms
  • 2 to 3 tsp chili oil
  • 1 tbsp chopped cilantro (fresh)
  • 1 tbsp sliced scallion greens
  • 1 tbsp crunchy garlic

Instructions

  1. Heat avocado oil in a large pot over medium heat. Sauté diced onion, minced garlic, and chopped mushrooms until softened.
  2. Add vegetable broth, soy sauce, salt, sugar, red Thai curry paste, and chili oil; stir well and bring to a gentle boil.
  3. Carefully add the frozen vegan dumplings; reduce heat to low and simmer for 5-7 minutes.
  4. Stir in coconut milk; warm without boiling and adjust seasoning if needed.
  5. Serve hot with garnishes of cilantro, scallion greens, and crunchy garlic.
