  • 120 grams powdered sugar
  • 2 large egg whites (about 65 grams)
  • 50 grams granulated sugar
  • 1/4 cup freeze-dried raspberries
  • 3/4 cup fresh or frozen raspberries
  • 2 tbsp granulated sugar (for syrup)
  • 1 tbsp lemon juice
  • 6 tbsp unsalted butter (at room temperature)

Instructions

  1. Preheat the oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. In a food processor, combine almond meal and powdered sugar, then sift into a bowl.
  3. Whip egg whites until foamy, gradually add granulated sugar, beating until stiff peaks form.
  4. Fold the almond mixture into the egg whites until the batter flows like lava.
  5. Pipe onto prepared sheets and rest for 30 minutes until a skin forms.
  6. Bake for about 15 minutes, cool completely.
  7. Prepare raspberry syrup by simmering fresh raspberries with sugar and lemon juice; strain to remove seeds.
  8. Beat room-temperature butter with cooled syrup until fluffy; pipe onto half the macaron shells and sandwich with remaining shells.
