  • 8 ounces ricotta cheese
  • 3 tablespoons olive oil (divided)
  • 4 minced garlic cloves (divided)
  • 1 crusty bread loaf
  • 1 bunch fresh basil (divided)
  • Balsamic glaze

Instructions

  1. Preheat your oven to 400ºF.
  2. In a baking dish, combine cherry tomatoes, 1 tablespoon olive oil, 2 minced garlic cloves, salt, and pepper. Roast for about 20 minutes until the tomatoes burst.
  3. In a blender, mix ricotta, 1 minced garlic clove, 1 tablespoon olive oil, and half of the fresh basil until smooth; refrigerate.
  4. Slice the bread into half-inch pieces. Brush with a mixture of remaining olive oil and minced garlic; bake for 10-12 minutes until toasted.
