  • 1 pound boneless skinless chicken breasts
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 stalks green onions, chopped (for garnish)
  • 1 tablespoon cornstarch (for slurry)

Instructions

  1. Prepare zucchini by slicing into half-moons. Slice mushrooms thinly and chop chicken into bite-sized pieces.
  2. In a bowl, combine chicken with soy sauce, garlic, and ginger; marinate for at least 10 minutes.
  3. Heat vegetable oil in a large skillet over medium-high heat. Add marinated chicken in a single layer and cook until golden brown (about 5-6 minutes).
  4. Flip chicken and cook for an additional 4-5 minutes until fully cooked. Remove from skillet.
  5. In the same skillet, add garlic and ginger; sauté for about 30 seconds until fragrant.
  6. Add zucchini and mushrooms; stir-fry for approximately 3-4 minutes until tender-crisp.
  7. Return chicken to the skillet; mix well with vegetables.
  8. Combine cornstarch with water to form a slurry; add to stir fry and cook for another minute until sauce thickens.
  9. Garnish with chopped green onions before serving.
