4 fillets Tilapia (or cod/haddock)
2 large Red Bell Peppers
2 tablespoons Olive Oil
2 cloves Garlic
Salt and Pepper to taste
2 tablespoons Lemon Juice
1 teaspoon Red Pepper Flakes
1/4 cup Fresh Herbs (basil or parsley)
Preheat the oven to 425°F (220°C). Slice the red bell peppers in half, remove seeds, and place them cut-side down on a lined baking sheet. Drizzle with olive oil and roast for 20-25 minutes until charred.
In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant (about 1-2 minutes).
Blend the roasted peppers with sautéed garlic and lemon juice until smooth; season with salt and pepper.
In the same skillet, cook seasoned tilapia fillets for about 3-4 minutes per side until golden brown and cooked through.
Serve tilapia topped with roasted pepper sauce and garnish with fresh herbs.
