  • 2 slices of sourdough or whole wheat bread
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • 2 large eggs
  • Fresh parsley or cilantro for garnish

Instructions

  1. Toast the bread until golden brown.
  2. In a skillet, heat olive oil over medium heat. Sauté onions and bell peppers for about 5 minutes until softened.
  3. Add minced garlic, cumin, smoked paprika, and cayenne pepper (if using). Cook for another minute until fragrant.
