- 1 lb shrimp (peeled and deveined)
- 1 head broccoli (cut into florets)
- 1/2 cup chicken stock
- 2 tablespoons vegetarian oyster sauce
- 1 tablespoon soy sauce
- 1 tablespoon peanut oil
- 4 cloves garlic (minced)
- 1 teaspoon ginger (minced)
- Salt and white pepper to taste
- Cornstarch for thickening
- Marinate shrimp in a bowl with apple vinegar, salt, white pepper, and half a teaspoon of cornstarch for 15 minutes.
- Prepare the sauce by whisking together chicken stock, vegetarian oyster sauce, soy sauces, sugar, and remaining cornstarch in a bowl.
- Blanch broccoli in boiling water for 1 minute; remove and set aside.
- In a skillet over medium-high heat, add peanut oil. Cook marinated shrimp until golden brown on both sides.
- Add minced garlic and ginger; stir-fry for another minute.
- Pour in the sauce and add blanched broccoli; cook for an additional 1-2 minutes until the sauce thickens.
- Serve hot over rice.
