  • 1 pound dried red beans
  • 1 link Andouille sausage (quartered)
  • 2 links smoked sausage (sliced)
  • 1 yellow onion (diced)
  • 1 rib celery (diced)
  • 4 cloves garlic (minced)
  • 3 bay leaves
  • 6 cups water
  • 2 beef bouillon cubes
  • 1 tablespoon Cajun seasoning

Instructions

  1. Rinse the dried red beans under cold water until clear.
  2. Dice the onion and celery, then mince the garlic. Quarter the Andouille sausage and slice the smoked sausages.
  3. In a slow cooker, combine all prepared ingredients: red beans, sausages, onion, celery, garlic, bay leaves, water, bouillon cubes, and Cajun seasoning.
  4. Stir well to mix everything together. Cover and set the slow cooker to high for 6 hours.
  5. Once cooked, mash some beans against the side of the pot for creaminess if desired. Serve over steamed rice.
