  • 3 celery stalks, diced
  • 1 can (28 oz) diced tomatoes
  • 1.5 lbs boneless skinless chicken thighs
  • 1 package andouille sausage, sliced
  • 1 lb raw shrimp (added last)
  • 1 tablespoon cajun seasoning
  • 1 teaspoon kosher salt
  • ½ teaspoon dried thyme
  • 2 cups chicken broth
  • 1 teaspoon minced garlic
  • 4 tablespoons butter (optional for roux)
  • ¼ cup + 2 tablespoons flour (optional for roux)
  • 2 cups cooked rice for serving

Instructions

  1. Optional: In a skillet over medium heat, melt butter and whisk in flour until dark brown for roux.
  2. In the slow cooker, combine diced vegetables, chicken thighs, sausage, seasonings, broth, and optional roux.
  3. Cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  4. In the last 15 minutes of cooking, add shrimp until they are pink and opaque.
  5. Serve over cooked rice.
