  • 16 ounces bowtie pasta
  • 14 ounces smoked sausage (beef or chicken)
  • 1 onion (sliced thin)
  • 3 garlic cloves (minced)
  • 2 tablespoons olive oil
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 3 cups milk
  • 10 ounces shredded cheddar cheese
  • 2 packages broccoli florets (fresh or frozen)

Instructions

  1. Boil salted water in a large pot and cook the bowtie pasta until al dente. Drain and set aside.
  2. In the same pot, steam or boil the broccoli until tender-crisp, then set aside.
  3. In a large skillet, heat olive oil over medium-high heat. Add sliced smoked sausage and sauté until browned. Remove from the skillet.
  4. Reduce heat to medium-low; add onions and garlic to the skillet and sauté until softened.
  5. Add butter to the skillet until melted, then whisk in flour to form a roux. Cook for two minutes without browning.
  6. Gradually whisk in milk, cooking until thickened. Stir in smoked paprika, salt, pepper, and cheese until smooth.
  7. Fold in cooked pasta, broccoli, and sausage until thoroughly combined.
