  • 1 lb diced chicken breast
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • 2 tbsp minced chipotle peppers in adobo
  • 1 tsp smoked paprika
  • Optional: corn
  • Optional: black beans
  • Optional: shredded cheddar cheese
  • Optional: chopped cilantro

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add diced chicken seasoned with salt and pepper; cook until golden brown, about 5-7 minutes.
  2. Stir in the rice, chicken broth, BBQ sauce, chipotle peppers, and smoked paprika. Bring to a boil.
  3. Reduce heat to low, cover the skillet, and simmer for 15-20 minutes until rice is tender.
  4. In the last five minutes of cooking, add optional corn or black beans if desired.
  5. Sprinkle shredded cheddar cheese on top and cover until melted (about 3-5 minutes).
  6. Garnish with chopped cilantro before serving.
