Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste
  • ½ teaspoon paprika
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • ½ cup heavy cream
  • 1 cup long-grain white rice
  • 2 cups water
  • 1 teaspoon dried thyme
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt, pepper, and paprika, then sear for about 5–7 minutes on each side until golden brown. Remove from skillet and set aside.
  2. In the same skillet, sauté chopped onions until translucent (about 3–4 minutes). Add minced garlic and cook for another minute.
  3. Combine cream of chicken soup and chicken broth in the skillet while scraping up any browned bits. Bring to a gentle simmer.
  4. Return the seared chicken to the skillet and stir in heavy cream. Let simmer on low heat for about 10 minutes.
  5. Meanwhile, in a separate pot, bring water to a boil, add rinsed rice, cover tightly, and reduce heat to low; cook for about 18–20 minutes until all water is absorbed.
  6. Serve the creamy chicken mixture over the fluffy rice and garnish with fresh parsley.
