  • 8 to 10 ears fresh sweet corn
  • 2 tablespoons bacon grease (optional)
  • 4 tablespoons butter (divided; use 6 if not using bacon grease)
  • Salt and pepper to taste

Instructions

  1. Shuck and clean the corn. Stand it in a large bowl and cut the kernels off with a sharp knife.
  2. Scrape down the cob with the back of the knife to collect any remaining starch.
  3. Heat a skillet over medium heat, adding bacon grease and 2 tablespoons of butter (or all butter).
  4. Once melted, add the corn and season with salt and pepper.
  5. Reduce heat to medium-low and cook for 20 to 30 minutes, stirring frequently until desired tenderness is reached.
  6. Add remaining butter before serving, allowing it to melt through.
