  • 2 chicken breasts, cut into thin strips
  • 2 tbsp vegetable oil
  • 1 onion, sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tsp crushed chili flakes
  • 1 cup jasmine or basmati rice
  • 2 large potatoes

Instructions

  1. Rinse rice under cold water until clear. In a pot, combine rice with 2 cups water and a pinch of salt. Bring to boil, then reduce heat and simmer covered for 12–15 minutes.
  2. Cut potatoes into thick wedges. Toss with oil and salt. Bake at 200°C (400°F) for 25–30 minutes or fry until golden brown.
  3. Heat vegetable oil in a large skillet over medium-high heat. Sear chicken strips until golden brown, about 5–6 minutes. Season with salt and pepper.
  4. Remove chicken from the pan and add onions and bell peppers. Sauté for about 3–4 minutes until softened. Add garlic and chili flakes; cook for another minute.
  5. Return chicken to the pan, add soy sauce, and stir-fry everything together for an additional 2–3 minutes until well combined.
